A labyrinth under Holy City
From Heiligenstadter Straße you do not know what is hidden behind the walls. About 300 years ago, Viennese winemakers dug passages into the hillside here to store their wine coolly. This became a labyrinth of about two and a half kilometers. With each stage, it becomes cooler and quieter. The so-called cathedral cellar is said to have even Carl Ritter von Ghega planned, the builder of the Semmeringbahn.
The fact that champagne matures down here is thanks to Vienna Robert Schlumberger. He learned his craft in a champagne winery in Reims and founded the first sparkling wine production in Austria in 1842. To this day, bottles are stored in these vaults, shaken and refined.
From the shaking desk to the dosage
The audio guide takes you step by step through the traditional bottle fermentation. You will find out where the fine pearls come from and why the bottles are upside down in the shaking desk. There you can turn a bottle yourself, just like the basement workers used to. Then it is about disorganizing and dosage, the little secret of every cellar master. How long you stay at each station, you determine yourself.
Striking in the vault
Finally, the tasting waits directly in the cellar. Depending on the ticket, try classic sect, rosé or both, and if you like, take a bottle home. Perfectly combinable with a walk through Heiligenstadt or an evening at Heurigen.
